Recipe for BBQ Chicken Pizza

Watching what we’re eating does NOT mean that food has to be boring, or that we have to deprive ourselves.  In fact, doing so is counterproductive.

If you’re getting a craving for pizza, give this recipe a try.  This is one of our once-a-week favorite treats!

BBQ CHICKEN PIZZA

INGREDIENTS

2 boneless chicken breasts
1 12″ Boboli Pizza 100% Whole Wheat Crust
1 small purple onion, sliced thinly in half circles
1/2 c. BBQ sauce
1 cup shredded low-fat cheddar
1 cup low-fat shredded mozzarella
olive oil cooking spray
dash of garlic powder
1 jalapeno pepper, sliced thin
1/2 c. black beans
1/2 c. canned corn

INSTRUCTIONS

Preheat oven according to Boboli instructions.
Lightly spray crust with olive oil.
Grill onions and vegetables for 2 ½ minutes, or until tender.  Set aside
Grill chicken breasts. When cooked, dice the chicken breasts.
Spread the onto crust; add grilled onions and vegetables, then top with cheddar cheese.
Spread diced chicken, black beans, and corn over pizza and top with mozzarella cheese.
Pop it in the oven for 10 – 12 minutes, or until cheese is evenly melted and crust becomes golden.

    Your recipe sounds yummy. Pizza is one of my top favorite foods that I miss when dieting. I found a frozen fat free pizza with only 252 calories (4 WW pts) for the whole thing – the case of 6 just arrived yesterday and some friends at work will be trying them and I am brining two with me to my friends house this weekend for her and I to try together.     That does sound yummy I eat pizza once a week mostly vegetarian thing is never really tried making my own perhaps something to consider in the not to distant future.
